Cranberry + Kale Salad Recipe
Cranberries are healthy and delicious! Try this hearty kale salad featuring fresh, organic cranberries from Ruesch Century Farm! Recipe inspired by @healthygirlkitchen on Instagram.
3 cups or one bunch of shredded kale (destem before chopping)
3/4+ cup of chopped organic cranberries and/or pomegranate seeds
1 cup of roasted sweet potato
1/3 cup golden raisins
1 cup chopped apple (we used green!)
3/4 cup chopped cucumber
1/2 red onion and/or 2-3 stalks of celery, chopped
1 cup cooked quinoa
1/3 cup slivered almonds
3 TBS apple cider vinegar
3 TBS olive oil
1 tsp dijon mustard
1 TBS maple syrup or agave
Chop/bake/prep all ingredients.
Make dressing and massage into shredded kale until it softens.
Add all other ingredients and toss together.
Saves for up to 3-4 days in refrigerator.
